so i made a great breakfast yesterday and meghan greene wanted the recipe (not that she was here for breakfast, she was here for dinner and may be showing up in the mornings now since she wants to taste this yumminess). so here is the recipe so that she won’t be knocking on my door at 6 a.m....
this makes enough for 2... i doubled the recipe.
1 regular can sliced peaches (i could tell you what size but then i would have to go to the pantry. and i would see all my laundry and despair and start doing laundry and never get to posting the recipe). so just buy the regular size (i bought the BIG size to double the recipe.)
drain the juice into a measuring cup. add milk to the juice to make 1 full cup of liquid. save the peaches for a bit later.
heat the one cup of the juicey milk to almost boiling. stir it the whole time. milk likes to be stirred.
once it is at the boiling point. add 1/2 cup couscous. take off of the heat. add a nice pat of butter, a tablespoon of brown sugar, and a teaspoon of nutmeg. stir all that up and set the pot aside for about 10 minutes while it couscouses all nicely. (b.t.w. “couscouses” is a word according to my spell check).
now serve it in bowls with the peaches (i told you to save them, hope you listened to me) on top. yummers.
my children are not oatmeal lovers. but they do like couscous. and it is fun to say. and really is more breakfasty that i originally would have thought.
and this looks good too. pumpkin pie oatmeal. i might have to give it a whirl.
or this cherry and tangerine oatmeal.
and there are always blackberry grits.
