school is breathing down my neck...

and i think it is drooling on me too (who remembers that alien ride at disney? wasn’t that the scariest thing EVER?) and that is exactly how i feel about school starting. we arrived home from washington, started washing-a-ton (i just love that pun) and checking email and trying to schedule everything that needs to be done before school. trying to decide what does NEED to be done and what is just chaff. the problem is that i have such a hard time separating the wheat from the chaff. i am just not a farmer type gal. i only recognize wheat when it is in a nice slice of already baked bread. and speaking of bread, here is my new favorite sandwich that i just made for lunch today for jessica, ashlyn, and myself. i had a sandwich like this in washington and i feel very politically motivated when i eat it...

THE ELLIPSE

take two slices of ciabatta bread

a few thick tomato slices 

add slices of that real mozzarella cheese and cover the tomatoes (sold in a roundish type shape and i made thick slices)

top with a few fresh basil leaves

and lastly add some roasted red peppers (from a jar, sold by the pickles)

then douse the inside of the top slice of bread with balsamic vinegar dressing

EAT IT UP. 

another thing to do with those leftover roasted red pepper slices....

on a pita
